Do you see what I see?




 Oh there you are little guy!




 Good morning little cat!

We have three of these little white guys and their gray and white momma under the porch next door.  They are wild so I am not sure if we can call anyone to rescue them but they sure are cute.  They really need a good home before the winter hits.

By the way it snowed in my hometown last night!  I have to drive there today to get my car fixed.  I hope it melts by then.  I am definitely not a snow girl!

I attempted to make a new bread last night, and failed...miserably.

I will post the photos but the recipe may need to hold off a bit.



Anyone guess the secret ingredient?










Honestly I am getting a little tired of seeing different kinds of pumpkin bread on my blog.  Monday it is back to cooking in my shoe-box kitchen.  Life will then slow down for a few days.  I am thinking an acorn squash recipe needs to appear before Thanksgiving!

Incase you want to tweak this recipe and make it correct here it is:

Ingredients:

1 can of pumpkin
3 organic eggs
4T (half cup) of Earth Balance Butter (melted or soft)
3/4 bottle of pumpkin beer
2 cups of all purpose flour
2c cups whole wheat flour
nutmeg
cinnamon
all spice
ginger
T baking soda
T baking powder

Optional:
chocolate chips
sweet and sara marshmallows (pumpkin)

Directions
  1. Preheat oven to 350F
  2. Mix the pumpkin, eggs, butter, and beer together
  3. mix all purpose flour, whole wheat flour, baking soda, baking powder, nutmeg, allspice, ginger and cinnamon.  Put as much spice in as you desire
  4. Fold in the dry ingredients into the wet ingredient.
  5. While filling the muffin tray you may add chocolate chips or marshmallows.
  6. If adding marshmallows place a little bit of batter in the try, add marshmallow, and cover with remaining batter.  In my case I used sweet and sara vegan marshmallows.
  7. Bake for about 20 minutes.

So far today I had Folgers class roast coffee with almond milk.
The end remains of Justin's Maple Almond butter with strawberry special K, almond milk and blueberries.

Now I am about to go insane.
